These are delicious and easy to prepare. They make a great lunch box staple. I have served them with eggs for breakfast, over zoodles and a homemade tomato-style sauce, in salads. There is relly no limit to what you can do with these yummy meatballs. I batch cook a bunch as part of meal prepping, and grab and go from the fridge as I need to.   • 600g Ground Beef(mince)
  • ½ White Onionfinely chopped
  • 50g Parmesan cheesefinely grated
  • 2Tbsp basil leavesfinely chopped
  • Salt and Pepperto taste
  • Barbeque Spice Blend(optional)
  • 1 Egg
  • 50g Mozzarella Cheesecut into about14 cubes
  1. Preheat oven to 180°C and line a baking tin with foil (shiny side facing up)
  2. Place the ground beef in a bowl and use a fork to separate it out
  3. Add in the onion, parmesan cheese, chopped basil leaves, salt and pepper (and barbeque spice if using) and mix it all with your hands.
  4. Add the egg into the mixture, and “knead” it with your hands until well combined
  5. Take a tablespoon sized amount of the mixture and roll between your hands to make a ball
  6. Break the ball in half, place a mozzarella cube in the centre then roll it again to re-seal the ball
  7. Place each completed stuffed ball on the lined baking tin
  8. Bake for 30 minutes, turning each of the balls halfway through the cooking time, to ensure they cook evenly
  9. Serve warm
