Ingredients
  • 1Head Cauliflower(cut into florets)
  • Salt and Pepper(to taste)
  • 2Tbsp Butter(about 30g)
  • 100Grams Cream Cheese(cubed)
  • 50ml Cream(optional)
Instructions
  1. Place the cauliflower florets into a pot and add the salt and pepper. Fill with water just enough to cover the cauliflower
  2. Boil on high heat, with the lid off, until all the water has evaporated
  3. Reduce the heat to low, add the butter and stir in until melted
  4. Add the cream cheese and stir continuously until melted, then remove from heat.
  5. If you would like the consistency a bit thinner, this is when you would stir in the cream.
  6. Mash using a potato masher or a stick blender (to make a puree), depending on how smooth you would like your caulimash to be.
  7. Serve warm, garnished with chives

If you are looking to add a meaty flavour or increase the nutritional profile, instead of the water, you can boil it in bone broth, which makes it wonderfully rich.
