Keto Coconut Bliss Balls
This is a great snack to keep handy for days when you need a sweet fix or are desperate for something small to nibble on. I take some with me to parties as a keto alternative to all the sweets generally served there. I pack some in my son’s lunchbox, I have one or two after a meal as a dessert. They are an incredibly versatile and delicious treat.
Keto Coconut Bliss Balls
This is a great snack to keep handy for days when you need a sweet fix or are desperate for something small to nibble on. I take some with me to parties as a keto alternative to all the sweets generally served there. I pack some in my son’s lunchbox, I have one or two after a meal as a dessert. They are an incredibly versatile and delicious treat.
Ingredients
  • 1Cup Water
  • 3Tbsp Chia seeds
  • 2Cups Desiccated coconut(shredded)
  • ¼Cup Coconut flour
  • 3Tbsp Raw cacao powder
  • ½tsp cinnamon
  • 3Tbsp coconut nectar or xylitol syrup
  • More shredded coconut for coating
Instructions
  1. Mix the water and chai seeds and set aside to gel.
  2. Combine the remaining ingredients (excluding coconut nectar) in a bowl.
  3. Pour in chia seed mixture together with the coconut nectar and mix well.
  4. Using your hands, roll dough into balls and dip in the additional coconut to coat.
  5. Set in the fridge for at least 1 hour

Keep stored in an airtight container in the refridgerator. These will keep for a week.
