For meals that are best served with rice in a traditional high-carb diet, cauliflower can be used as a replacement on the low-carb version. Cauli rice comes out fluffy and soft, yet firm in structure – quite similar to traditional rice. The taste is also quite similar. You can easily transition from rice to cauli rice without feeling like you’ve given something up.

Ingredients
  • 1Head Cauliflower
  • 2Tbsp Ghee
  • 2/3Cups Water
  • 1tsp salt
Instructions
  1. Grate the cauliflower over a bowl, or otherwise run it through a food processor (not a blender!)
  2. Heat the ghee in a pot and add the cauliflower. Stir vigorously and continuously for about 3 minutes to ensure the cauliflower does not stick to the bottom of the pot, whilst becoming al-dente
  3. Pour in the water and salt and stir for another 10 seconds or so. Then partially cover the pot, while the cauliflower cooks through.
  4. Keep checking on it and giving it a stir, until all the water has evaporated.
  5. Once done, remove from the heat and serve warm.
