3 Tbsp Butter (for frying)

1 Onion, finely cut

1 bunch of spinach

1 tsp crushed garlic

100ml heavy cream

100g Cream cheese, cut into rough cubes

1 cup cheddar cheese, grated

Salt and pepper to taste



Heat the butter in a pan and add the onion. Cook until translucent

Add the spinach and cook, turning continuously, until lightly wilted

Add the garlic and cook for a further 3  – 5 minutes

Turn down the heat to medium and pour in the cream. Stir until combined

Add the salt and pepper to your taste preference

Add the block of cream cheese and stir until melted

Sprinkle over the cheddar cheese and stir until melted

Turn the heat to low and allow to simmer for 2 minutes, before removing from the heat
